This easy vegetarian black bean enchiladas recipe is packed full of nutrition but isnโ€™t short on flavor. Perfect for meat-eaters and vegetarians alike. I recently was cleaning out my basement pantry when I came across these black bean enchiladas at the very bottom of our chest freezer. I had made them last year nearing the end of my pregnancy to prep for postpartum. Somehow Iโ€™d forgotten about this. Despite being 9 months old (!) I defrosted them and they were still delicious (I made a note that they freeze well for 4 months but clearly they can go longer). Thankfully I wrote down the recipe last year and thought it was due time I share it with you. These black bean enchiladas are honestly the best recipe ever.
